Make the most of citrus season with marmalade!

In this four-hour introductory class, Rachel takes you through the marmalade-making process from start to finish. We will cook four different marmalades, two versions each of two different seasonal flavors, enabling you to understand some of the different factors affecting the texture and flavor of the finished product. This class is geared towards helping you comprehend the tenets of marmalade making, ensuring you go home prepared to make your dream marmalade!

The class starts with an hour-long marmalade tasting and discussion, then proceeds to the cooking process. We will examine a wide range of topics, including the special role of sugar, the importance of lemon juice and how to add it, the stages of the cooking process, testing accurately for doneness, and the way in which the preparation of the raw fruit impacts the finished marmalade. As marmalade making is a 3-day process, most of the fruit prep will occur before class; however, students will have ample opportunity to dive in, especially when we are testing that our marmalade has set properly!

Our class runs from 5-9 pm and takes place at our beautiful Oakland kitchen! Tea, snacks, and homemade sweets will be provided, and you will receive four jars of marmalade! Classes are limited to 12 students and class fees are nonrefundable. Students must be at least 18 years of age. We will send you an informational e-mail a few days prior to your class date. We will have all Blue Chair Fruit jam and marmalade flavors available to purchase during class.
