This unusual marmalade is one of our very favorites, and is especially good on some really dark rye or whole wheat toast. Top-notch Valencia oranges, combined with the distinctly wine-like flavor of wild elderberries, make a very intensely flavored marmalade with a complex and unforgettable flavor. Among orange marmalades, it is one of the sweetest. We love this marmalade on a chilly winter’s morning, accompanied by a steaming mug of coffee or malty Irish tea, but it also makes a lovely filling for tarts or other desserts. Yum!
