A haunting and sophisticated marmalade

We reserved some of summer's tiny, tart elderberries for this complex marmalade. The background jelly is an infusion of wild elderberry juice and apples that possesses a hint of caramel and brings the lush flavor to this marmalade. Medium-cut sweet oranges add bite for a regal spread with very little bitterness. Elderberry-Orange Marmalade is a year-round delight!

To serve: Muddle into a whiskey cocktail; layer into a crostata
