3/2: Marmalade 101
Make the most of winter fruits with marmalade!
In this 4-hour introductory class, Rachel takes you through the marmalade-making process from start to finish. We will cook four different marmalades, including at least one multi-fruit marmalade. Our focus will be on identifying the physical properties of different citrus fruits and understanding how these properties relate to both the marmalade process and the end result. We will examine key topics such as how to integrate an unknown fruit into a simple base recipe, possible variations on the traditional three-day marmalade process, and a review of marmalade basics. This class starts with an hour-long jam tasting and discussion, then proceeds to the cooking process.
This class runs from 5 to 9 pm and takes place at our beautiful Oakland kitchen! Tea, dessert, and a light dinner will be provided, and you will receive four small jars of marmalade! Classes are limited to 15 students and class fees are nonrefundable. Students must be at least 18 years of age. We will send you an informational e-mail a few days prior to your class date. We will have all Blue Chair Fruit jam and marmalade flavors available to purchase during class.
